I've always loved Meringues, ever since my mum used to buy me those horrific white snowman monstrosities you can still get in bakeries today. These days I'm more likely to shun that sort of mass produced gack for an artisan spelt loaf or a selection of over packaged and overpriced Macarons. However Meringues have still remained my firm favourite, so when I discovered the Meringue Girls on Instagram I totally fell in love with their delicate rainbow creations.

Since then, I've purchased their amazing Recipe Book and been attempting to perfect the Meringue Kisses recipe. This is my latest attempt using Powdered Egg Whites and pink and purple Sugarflair Gel Colouring which I painted onto the inside of a disposable piping bag to get this striking striped effect. 




The previous batch didn't work very well. I had used water-based food colourings which gave a less than show-stopping result and real egg whites, which are more difficult to stabalise. This was explained to me by my sister, who is a Patisserie chef and therefore well versed in these fancy little creations. She showed great patience in my melodramatic "woe is me" reaction to the disappointing first batch.





Batch Two have been much more successful now I'm starting to get the hang of it, as you can see from the above pictures.

These little kisses have such a visually striking appearance that people can't help but be impressed by them 
(Shhh... you don't have to tell them they were easy-peasy to make) They also keep for up to 2 weeks in an airtight container, perfect for wowing work colleagues, prettying up a bowl of strawberries and cream or popping into the kids lunch boxes -their teachers can tackle the afternoon of inevitable food-colouring induced hyperactivity




Once you've mastered the basic kisses technique the recipe book provides a variety of uses for them as well as numerous other Meringue based delights, the book has swiftly become my baking bible. Despite being easy and cheap to make, mastering the technique gives even the most amateur of bakers such a tremendous sense of achievement. Yes, I burnt the cupcakes, my choux buns were inedible and I still have pretty serious burns from the the brandy snaps... But! I made these and I'm pretty proud of my little stripey kisses.

I was HUGELY looking forward to visiting the newly opened Meringue Girls Bakery in London last week, however I was forced to cancel my London trip due to complications with my pregnancy (Both Mummy and Baby are doing fine now.) I'm sure it won't be long before I'm scheduling in another trip, in the meantime I have this beautiful phone case to console me, kindly made for my by The Dairy:

The girls will also be running Masterclasses throughout the coming months for those of us who aren't lucky enough to have a Patisserie Chef sister on hand to stem the flow of tears when it all goes tits-up!

  2. I love love love Meringue and I actually just know the name of that things. I still remember when I was still a kid, I use to eat many of those! Great post and thanks for bringing me back to my childhood memories <3 xo

    1. They were always my nemesis too, so I'm chuffed I've managed to get the hang of these!

      I hope they run a second batch of Masterclasses later in the year as I can't make any of the dates they've offered unfortunately :(
