Strawberry Compote

Strawberry season is upon us! My favorite time of the year and  when I can make an absolute pig of myself munching natures finest. I will happily eat a whole punnet of Strawberries in one hit but to take advantage of those buy one get one free deals I often whip up a smoothie or some Ice Lollies (Recipe here) or this quick and easy compote which is great for popping on your breakfast, on ice cream or even in cakes.

All you need is 200g of Strawberries, it doesn't matter if they are a little overripe as this will only enhance the flavour plus 50g of Caster sugar and 100mls of water. Simply quarter up or halve your strawberries depending on size and chuck all three ingredients into a pan. Bring the water to the boil, stirring in the sugar to dissolve before simmering it for about 5 minutes until the liquid starts to become a little syrupy in consistency. Wait until it has cooled down before serving as it will be SUPER HOT. This will give you time to whip up some pancake batter by mixing two eggs into 100 grams of flour and combining with 300mls of milk. 

The compote will keep in the fridge for a couple of days and is a great way to use up those squishy, overripe strawberries.
